Rube Goldberg decks use elaborate chains of interactions to accomplish something that could often be achieved far more simply. The appeal is the machinery itself: numerous cards, triggers, loops, and moving parts eventually produce one spectacular result.
Artifact combo decks are particularly suited to the style, while commanders such as Teshar, Ancestor's Apostle can enable intricate recursion loops. Winning is nice, but successfully explaining what the contraption does is also part of the experience and fun.
